Foodie Friday- Tortilla crusted Tilapia Filet with Corn and Blackbean Stew.

This will be the first in a new series that Justin and I hope to post weekly.
We're major foodies, we met in a 5-star restaurant, and both still work the room for cash occasionally at two different restaurants. We learned to cook through working there and if we may toot our own horn(s), we cook gooooood. :-)

Here is the first Foodie Friday recipe (except they won't ever be recipes because I never use recipes)

Tortilla crusted Tilapia Filet with Corn and Blackbean Stew and a Lime Caesar Salad

Ingredients:
Tilapia filet (frozen and already tortilla crusted from seacuisine or fresh and crust your own)
1 can of black beans
1 bag of frozen corn
1 large meaty tomato
1 avocado
Tortilla chips

Salad:
Lime Ceasar
Ingredients:
Romaine Lettuce
1 whole lime
Mayo
Cottage Cheese
Garlic Powder & Garlic clove
Parmesan Cheese


If you're using the already crusted kind, you just follow the directions and bake it. If you're crusting your own, spray or butter your fresh filet and pat each side in the crunched up tortilla chips, then bake.
Stew your corn, black beans and diced tomato on simmer until they are all tender and the flavors have combined!
Add seasoning as desired!
Fresh Guacamole:
Mash up the avocado, add red onion, garlic, pepper and lime juice and top your meal with a dallop of that green goodness!


This salad features my quick and easy "homemade" Ceasar dressing.
All you do is mix a spoon full of mayo with a spoon full of cottage cheese, blend in some seasonings like garlic, salt, pepper. I usually add a squirt of balsamic vinegar as well. Then toss the salad with the dressing and a whole lot of grated Parmesan cheese!! This salad features the addition of crunched up tortilla chips and lime juice to give it that southwestern flaire!!

Whole meal takes about 20 minutes to make and is absolutely better than any dish at a chain restaurant.
